Tips for Barbecuing.
1. Judge the cooking time of each item.
2. To keep meats moist add a pan of water close to the fire, away from the meat.
3. When grilling chiles keep the smoke away from your eyes. It burns.
4. If your vegetables have a thick skin, cut off ends to allow water to enter.
5. For evenly cooked sausage, split lengthwise, leaving casing intact on one side.
6. Always use the leanest meat possible — young actors do quite well.
